Spanish Rice

1 tablespoon olive oil

1/2 cup onion, diced

1/2 cup green pepper, diced

1 cup long grain white rice

8 oz mild or medium salsa

1 cup water

1 teaspoon salt

1/2 teaspoon black pepper

INSTRUCTIONS

In pressure cooker, saute onion and green pepper in olive oil until starting to soften, about 2 minutes.

Add in rice and saute for 2 minutes until rice starts to become opaque.

Add salsa, water, salt, and pepper. Stir then lock lid and set to high pressure for 5 minutes.

Do a natural release for 5 min followed by a quick release for any remaining pressure.

Serve warm!
