Cobb Salad
Or "Cob Salad" as I am likely incorrectly searching
Serves 6
INGREDIENTS
6 heads of romaine or 10 oz. bag
2 large corn off the cob or 2 cup canned
2 cup cherry tomatoes, sliced in half
1/2 red onion, diced
2 cup crispy roasted chickpeas (canned is great too)
Two (2) cans chickpeas, drain and rinsed -> put on pan with parchment paper -> drizzle olive oil, salt and garlic powder (mix around) -> bake 400 F for 40-45 min stirring every 10 min or so
1 cup coconut bacon
1 cup radishes, quartered
1 1/3 cup Ranch Dressing
Mineral salt & pepper, to taste
Fresh chopped parsley, to garnish
Avocado slices, optional
Hard boiled eggs, optional
INSTRUCTIONS
In individual large bowls, add the romaine and arrange the chickpeas, tomatoes, radishes, avocado, vegan bacon, corn, and red onion over top. Drizzle with dressing, add a sprinkle of parsley, avocado, and season with salt and pepper.
